Restaurants Owners Going Local
According to a survey by the National Restaurant Association, professional chefs are recognizing the demand for healthy, locally sourced foods in their restaurants. The 1,500 chefs surveyed said that the Top Ten Trends for 2011 in restaurants are:
- Locally sourced meats and seafood
- Locally grown produce
- Sustainability
- Nutritionally balanced children's dishes
- Hyper-local (e.g. restaurant gardens, do your own butchering)
- Children's nutrition
- Sustainable seafood
- Gluten-free/food allergy conscious
- Simplicity/back to basics
- Farm/estate-branded ingredients
It is wonderful to see that these trends, which are so important to Local Matters, are of concern to enough people that restaurant owners are making a conscious effort to incorporate them in their businesses. Some of these trends, such as simplifying the menu, also help restaurants during this economic recession. Local beers, wines and micro-distilled spirits or organic coffee and specialty teas are also in high demand.
