Sodexo offers optional "Meatless Mondays" to clients
Clients of Sodexo, such as schools, universities and hospitals, can now choose to participate in Sodexo's "Meatless Mondays" program, which supplies one meal a week that is based entirely on a vegetarian dish. This is not only to provide a healthy, vegetable based meal once a week, but to expose people to vegetarian recipes that can be appealing outside of cafeteria food. Since a diet heavy in vegetables, legumes, nuts and fruits (paired with healthy amount of exercise) is shown to decrease levels of cholesterol, blood pressure and obesity, Sodexo wants to support healthy decisions in their cafeterias.
I think that it would be wonderful if Sodexo provided a delicious vegetarian option (as opposed to the usual vegetarian options that are rich in creams and carbs). Also, I think that if it were done correctly people would not even notice that meat is missing from their trays. However, if the meals are sparse and unfilling I wonder if some people might be upset and feel that they are being forced into a lifestyle they did not choose. I think that schools and hospitals should pair this program with posters or some sort of educational literature that helps their customers understand why the cafeteria has decided to serve vegetarian meals.
