Who Says "Kids Won't Eat Their Green Beans?"
As a Food Educator and the manager of the Food Matter's Program, I have the opportunity to see children of many different ages and some adults engaged with healthy whole foods. In our Food Matter's classes we create opportunities for children to help prepare and taste healthy meals.
For this lesson, students helped prepare a French Green Bean Salad. The children washed hands, reviewed knife safety and used a plastic knife to help cut potatoes. They also used their hands to tear lettuce, and helped mix the salad dressing. It was so fun to watch them get so excited about helping and this, in turn, makes them want to try the food more.
In our second semester of Food Matters, we have been focusing on different cultures around the world and trying healthy recipes from each culture. This blog post includes pictures from one of our Headstart Pre-schools engaged in the France lesson.
We have visited coutries such as: Mexico, Ireland, Somalia, India, Japan, Tibet and Brazil. Next week we will learn about the Caribbean and try a tropical fruit salad with a Red Beans and Rice dish. Finally, we will wrap up the school year with a Hawaiian lesson where the children help make and taste a Pineapple Rice recipe.
There is much more to come....as Food Matters will be involved in summer camps and will be expanding our school programs in the Fall!!!
