10 Ways to Use Zucchini & Summer Squash
1) shred in a food processor and stir into tomato sauce for spaghetti

3) dice in large chunks, toss with olive oil & salt, and make kabobs for the grill with veggies and/or marinated meat
4) dice medium or cut in thin strips and add to a stir fry

6) cut in thin strips and sauté with fajita seasoning; serve with warm tortillas or use as a filling for quesadillas with shredded cheese
7) dice medium, sauté or grill until tender, toss with pasta and pesto
8) make zucchini “boats”: cut lengthwise, hollow out the center by scooping out the seeds, stuff with a filling of cheese, grains, ground meat, or small-diced vegetables and bake at 375 degrees until tender, about 45 minutes

Bake at 375 degrees until lightly browned, about 15-20 minutes. Serve with marinara sauce.
