Easton Farmers Market Recipe- Bison Meatballs
Bison Meatballs
1 egg
1 Tbsp minced fresh parsley
dash of Tabasco sauce
1/4 tsp salt & dash of black pepper
2 cloves garlic, minced
2 tsp Italian seasoning
1 pound ground bison
1/2 cup grated Parmesan cheese
1/2 cup fine dry bread crumbs
Method
Crack egg into mixing bowl and beat slightly. Blend in parsley, Tabasco, salt, pepper, garlic, Italian seasoning, and bison meat. Blend in Parmesan cheese and bread crumbs, a little at a time, until meat mixture binds together. Roll to desired size.
For pan frying: Heat 1 Tbls olive oil in a non-stick skillet. Cook, stirring occasionally, until browned and fully cooked, about 8-10 minutes.
For baking: Line a sheet pan with foil, spray lightly, and bake at 325 degrees for 12-14 until done.
Serve with desired sauce.
Yield: approx. 3 dozen mini-meatballs
