Fresh Stop Recipe: Potatoes, Turnips and Kale

Each week the bags are accompanied by a newsletter with healthy eating and healthy living tips and recipes, as well as a cooking demonstration and tasting of the recipe. Here's a recipe from a recent Fresh Stop newsletter.
Potatoes, Turnips and Kale
2 tbsp oil
3 cloves of garlic, minced
1/2 onion, finely chopped
2 cups turnips, med. dice
1 bunch kale, finely chopped
1 cup of stock or water
2 potatoes, med. dice, roasted
Kosher Salt to taste
2 tbsp Italian Parsley, chopped
Sauté the garlic, and onion in the oil
until soft. Add the turnips and cook
until soft. Add the kale and stock or
water to steam and soften the kale.
Add the potatoes and warm.
Re-season as needed w/kosher salt
Yield: 8 adult portions
