Being Vegan

So you want to become a vegan!  Go for it!  I congratulate you!  While local matters does not tell people they need to be vegan to be healthy...we do support people in any improvements or upgrades they would like to make to their diet. 

So what is a vegan?  A vegan is anyone who does not eat meat, eggs, dairy, honey or any other animal food or product.  In addition, most vegans, do not buy shoes or clothes made from leather, wool, or silk. 

Meatless Meals for Meat Lovers (Part Deux)

Ok, so I promised to provide more recipes for those who have a person in our lives that we have to ween off of meat at every meal.  Here is another very hearty meal that they may not even notice is meatless.

I love eggplant, it is a great "meaty" fruit (we just went over fruits in Food is Elementary class, so I have to use the correct nomenclature, or believe me, the students will notice! lol) and because it can be so hearty, it is easy to eat it without the presence of meat. This Moroccan inspired dish is sure to please.

ROASTED EGGPLANT

 

1 small whole eggplant (around 5 in long)

2 tsp. pine nuts, toasted

1/2 cup cooked brown rice

Meatless meals for meat lovers

Ok, so lets face it, not everyone eats the way that they should. For those who feel that they need a slab of meat to create a meal, warm them up to the idea of getting their protein without all of the saturated fats with a hearty stew! Besides the Ohio weather has been getting cooler its about time for the soups.

Now, I don't want to overwhelm you with a whole lot of recipes and info so I will part it to you in several posts so that you can read at your own leisure.

Ok, so on with the show...

White Bean Chili with Jalapeno Bulgur

This takes a total of 30 min total to prepare (YAY!)

1/2 cup bulgur wheat

1 Tb fresh lemon juice

2 scallions

1 jalapeno (sorry no tildes on the blog) seeded and chopped

2 Tb OO (doesn't have to be EVOO but that's always nice, btw OO=olive oil)

1 large onion chopped

1 green bell pepper chopped

2 cloves of garlic chopped
