Three Sisters Salad

Yield: 8 servings


2 cans (15 oz. each) red kidney beans, drained & rinsed
2 cups fresh corn kernels
2 cups (raw) diced zucchini
¼ cup diced red onion

½ cup olive oil
¼ cup Ohio maple syrup
¼ cup red wine vinegar
2 Tbsp fresh thyme leaves
½ tsp. cumin
Kosher salt to taste


1. Place beans, corn, zucchini and onions in a large bowl. In a separate bowl, whisk dressing ingredients together. Pour dressing over salad and toss to combine.
